Fall offers many seasonal flavors for creative baking and cooking. Pumpkin, apple, cinnamon and maple, are just a few of the many unique flavors that can be incorporated into fall recipes. Both UMD students and the dining halls have a few creative ideas of their own to spice up their recipes for the festive season.
Pumpkin is a well-known flavor featured in the fall which can be used in many recipes. Winter Hawk, senior journalism major with international development and conflict minor, said she recently had a pumpkin bread where apple sauce was used instead of butter and she loved it. She plans to have this again but add apple chunks next time. She also enjoys the pumpkin loaf from Starbucks. Pumpkin spice lattes, which can also be found at Starbucks, are a hit for some students including freshman computer science major, Cara Murphy. Another way Murphy takes advantage of incorporating pumpkin during the fall is by having pumpkin pie on Thanksgiving.
Murphy enjoys making her own spin on drinks too. “I always try new syrups at home every year,” said Murphy.
Murphy likes to make her coffee more exciting by adding maple, apple and pumpkin syrups by boiling down puree. Hawk also loves to add a twist to her drinks in the fall. “I’m a big chai fan year round,” she said, “[but] I add cinnamon in the fall.”
Hawk also likes to add different flavored milks. She said that loaves can be a good addition to have as a snack with her chai tea.
The dining hall also implements different fall flavors to their menu. Student nutritionist and nutrition and dietetics major, Elise Roen, said this year for the dining hall’s ‘Harvest Night’ they “are adding new recipes…such as baked apples and brown butter and squash pasta.” The dining hall recently incorporated seasonal produce to make butternut squash noodles with chicken which students loved.
Making fall recipes can bring comfort to students during this time of year and there are many places to look for inspiration. The Food Network has a great resource entitled “46 Pumpkin Recipes That Are Perfectly Delicious.” The article has a wealth of recipes such as pumpkin cream cheese muffins, pumpkin lasagna rolls, pumpkin protein waffles and even pumpkin spice ice pops. Incorporating fall flavors to staple recipes brings fall spirit and gives these recipes a unique seasonal spin.
